1 • Select the best grape varieties

We start with the best terroirs and the most expressive grape varieties to create rich, balanced wines.

The ripeness of the grapes is crucial: they must have a delicate acidity, which carries the aromas, and just the right amount of sweetness to harmonise them.

Some grape varieties are too volatile and lose their intensity after dealcoholisation, while others are too neutral and lack character. That is why we favour varieties that are able to retain their full personality throughout the process.

2 • A well-mastered winemaking

The moment when the grape becomes wine and reveals its DNA.

Fermentation is a key step: it transforms the grape and gives it its vinous DNA, far from a simple fruit juice. It is generally done in vats for greater freshness, but on certain wine profiles, there may be fermentation partly on wood to maximize the potential of the vintages.

This is where our oenologists adjust their choices: they must anticipate how the wine will look once dealcoholized. Too lively acidity or too marked tannins could risk unbalancing the whole; conversely, a certain roundness and good balance on the palate guarantee that the wine will retain all its harmony after the process.

3 • Dealcoholization

Dealcoholization is a delicate step that requires as much precision as respect for the wine. This is an exciting challenge for us: managing to preserve all the richness of a great wine while removing the alcohol.

We use vacuum distillation at low temperatures, between 30 and 35°C, a process that allows the alcohol to evaporate before the water and aromatic compounds.

This gentle method avoids “cooking” the wine and preserves the balance of its aromas. Thanks to this technical and meticulous know-how, our vintages retain structure, freshness and all the aromatic richness of the original wine.

Dealcoholization naturally modifies the structure of a wine: without alcohol, the aromas are expressed differently, carried by texture, freshness and sometimes a touch of bitterness.

At moderato, we have developed precise know-how to find balance, by working on the texture, aromatic expression and harmony of the wine. Each cuvée is thus patiently adjusted until its optimal profile is revealed.
