Production method
We get this degree by adding an additional step to the manufacturing process. After the complete vinification of our wines, we reduce the level of alcohol by vacuum distillation at low temperature. This process helps preserve the aromatic qualities of origins wines while separating alcohol thanks to evaporation. The goal is to always keep the best balance for a unique experience!

We are looking for the best wines with specific characteristics (balance, aromas ...) so that they keep the best of themselves when reducing alcohol. On our new cuvées, we went to organic by going to seek an original grape in Mancha (in Spain), the Verdejo, which we then assemble with other aromatic wines (also organic and from the south of France) for unique creations!
Product characteristics
All our products are currently 'dry', that is to say with sugar contents close to those of conventional wines. And that doesn't mean they are not fruity!
With moderato We want to expand the wine family, by inspiring strongly but to create new unique styles. Our goal is to enhance this 'wine' on a new experience while keeping the fruit, freshness and this small length so typical of the wine family!
Our products are designed to be young and rather fresh or refreshed bus (for red). So we recommend drinking them in the year but they can keep for 2 years.
