Created with Sigalas Rabaud, this dealcoholised sweet wine is made from Sémillon grown on exceptional South-West terroirs and reflects the estate's exacting standards and time-honoured expertise. The nose blends candied fruit, apricot and honey. The attack is luscious, held by a freshness that lengthens the finish. Serve with a mature cheese, roast poultry or a fruit dessert. Dealcoholised (<0.5% ABV).

Serve it well chilled, between 6 and 8°C, in a glass suited to white wines to reveal its full aromatic richness. It will pair perfectly with an aperitif, foie gras, soft-ripened cheeses, or a dessert.

GRAPE SELECTION
Sémillon is the grape of South-West France's great sweet wines, and nothing else could match what we wanted to achieve here. Its thin skin and natural richness give aromas of candied fruit, apricot and honey, powerful enough to stay whole once the alcohol is removed. Created with Sigalas Rabaud, this cuvée draws on time-honoured expertise and exceptional South-West terroirs, where the grapes reach a concentration few regions allow. Ripeness matters even more here than elsewhere: it gives the sweetness, held in check by the freshness that prevents any heaviness. Work in the vineyard does the rest, right through to the luscious attack and the long, enveloping finish.

the art of blending
The blend is where a wine without alcohol finds its true identity. Our oenologists build each cuvée with the final balance in mind: they fine-tune acidity, tannic structure and aromatic expression so that nothing is missing once the alcohol is removed. Fermentation usually takes place in tanks, for freshness, and sometimes partly in oak for added depth.
Combining grape varieties, adjusting proportions, revealing complexity: this exacting approach, praised by leading sommeliers and rewarded at international competitions, is what sets a true wine without alcohol apart from a simple dealcoholised juice.

GENTLE DEALCOHOLISATION
Dealcoholisation is the most delicate step in our craft. Moderato uses low-temperature vacuum distillation, between 30 and 35 °C: under vacuum, alcohol evaporates before water and aroma compounds, so the alcohol can be extracted while preserving the structure, freshness and bouquet of the original wine.
This gentle method protects the most fragile aromas that heat would destroy. Each cuvée is then carefully fine-tuned (texture, balance, length) to offer a wine without alcohol that stays true to the winegrower's work, with no compromise on pleasure.

FAQ
We look for the best wines with specific characteristics (balance, aromas, etc.) so that they keep the best of themselves during alcohol reduction. Our alcohol-free wines are all produced from Southwestern grape varieties, appreciated throughout the world for their strong typicity, aromatic freshness and fruity/floral notes. Colombard, Cabernet Franc, Cabernet Sauvignon, Gros Manseng… the South-West vineyards offer a fantastic range of terroirs and wines!
Our wines are first made as true vintages, with particular attention paid to the selection of grape varieties and blends. The alcohol is then removed using a gentle dealcoholization process by vacuum distillation at low temperatures. This technique allows the alcohol to be extracted while preserving the aromatic structure and complexity of the wine. The result: balanced, expressive vintages faithful to the work of the winegrowers.
With moderato, we want to expand the wine family: we take inspiration from classic wine to create new unique styles. We clearly find the essential markers of wine - tannins for the reds, slight bitterness for the rosés, acidic freshness for whites — but without alcohol. Our objective is to preserve this wine DNA, by highlighting the fruit, the freshness and this characteristic little length in the mouth, while offering a new experience free of alcohol.
We work with a company specializing in logistics and wine transport as well as with Chronopost for delivery. YOU will normally receive your products within a few days (2 to 3) even if we cannot always guarantee this. In any case, we do everything we can to make it happen!
