GRAPE SELECTION

At Moderato, every great wine without alcohol begins with a rigorous selection of grape varieties. We source from the terroirs of South-West France, Bordeaux and Gascony, regions renowned for the strong character of their grapes. Cabernet Franc, Cabernet Sauvignon, Merlot and Tannat for the reds; Colombard, Gros Manseng and Sauvignon for the whites: each variety is chosen for its aromatic freshness, its fruity and floral notes, and its ability to keep its personality once the alcohol has been removed. Ripeness is decisive here: it ensures fine acidity and harmonious sweetness, the foundation of the final balance. By working hand in hand with partner winegrowers and selecting the most expressive plots, we preserve the soul of the wine (its fruit, tension and length) so that it comes through intact in our cuvées.

the art of blending

The blend is where a wine without alcohol finds its true identity. Our oenologists build each cuvée with the final balance in mind: they fine-tune acidity, tannic structure and aromatic expression so that nothing is missing once the alcohol is removed. Fermentation usually takes place in tanks, for freshness, and sometimes partly in oak for added depth.

Combining grape varieties, adjusting proportions, revealing complexity: this exacting approach, praised by leading sommeliers and rewarded at international competitions, is what sets a true wine without alcohol apart from a simple dealcoholised juice.

GENTLE DEALCOHOLISATION

Dealcoholisation is the most delicate step in our craft. Moderato uses low-temperature vacuum distillation, between 30 and 35 °C: under vacuum, alcohol evaporates before water and aroma compounds, so the alcohol can be extracted while preserving the structure, freshness and bouquet of the original wine.

This gentle method protects the most fragile aromas that heat would destroy. Each cuvée is then carefully fine-tuned (texture, balance, length) to offer a wine without alcohol that stays true to the winegrower's work, with no compromise on pleasure.
